Releasing a lemon flavour when crushed, it is a key herb in Thai cuisine adding a cooling contrast in spicy curries and soups.
The citrus flavours can be used in both sweet and savoury. Gently crush and add a stalk to curries, or pop into a mug of hot water with ginger for a soothing tea.
Add to cooking early on to allow the delicious flavour to permeate.
